68.7% of the population is White, 23.4% is Black or African American, 29.3% is Hispanic or Latino, 5.2% is Asian, 0.7% is American Indian or Alaska Native, 0.1% is Native Hawaiian or Pacific Islander, and 1.9% is two or more races.  85.3% have a high school degree or higher, and 31.8% have a Bachelor degree or higher.

The median home value is $362,300, there are 185,483 households, an average of 2.88 persons per household.  The per capita income is $35,089,  the median household income is $68,507, and 10.8% of the persons in Union County are considered below poverty level.
