92.7% of the population is White, 2% is Black or African American, 40.7% is Hispanic or Latino, 0.6% is Asian, 2.9% is American Indian or Alaska Native, 0% is Native Hawaiian or Pacific Islander, and 1.9% is two or more races.  77.3% have a high school degree or higher, and 17% have a Bachelor degree or higher.

The median home value is $86,500, there are 1,606 households, an average of 2.49 persons per household.  The per capita income is $18,472,  the median household income is $38,902, and 11.9% of the persons in Union County are considered below poverty level.

The total number of firms, at last estimate, was 456.  Retail sales (in $1000) were $27,509, and sales per capita were $7,399.  The percentage of black-owned firms is 0%, and the percentage of women-owned firms is 16.9%.
